This coffee is produced by Carmen Gagnay, who owns a 3-hectare coffee farm named La Fortaleza in Palmito Pamba, Ecuador. She primarily planted Bourbon and Sidra varieties. Carmen and her son have committed themselves to growing specialty coffee. For four months in a year, they picked and depulped ripe coffee cherries, fermented them dry for at least 15 hours. The coffee is then washed and dried for about 10 days. This coffee has bright notes of passionfruit and apricot, followed by raisin finish.
