This coffee is a special micro-lot from Las Alasitas, a 20.6 hectares farm owned by Pedro Rodriguez. It's located in Bolinda, about 10 kilometres outside of the town of Caranavi. Las Alasitas was first planted in 2014, the farm sits at about 1,642 metres above sea level. The view is so special that Pedro and his family built a house on top of the farm, called La Casita. Due to the high elevation, Las Alasitas experiences cool night temperatures and mild day temperatures, resulting in a slow ripening of coffee cherries. This produces higher concentration of sugar in coffee cherries and sweet cups of coffee. This lot was processed with an experimental technique developed by Pedro. Drawing inspiration from the wine industry, the coffee was fermented in a sealed and controlled environment, resulting in greater complexity and fruitiness in the cup. This coffee has notes of black plum and stewed pineapple, with chocolate ganache undertones.
