Among the most respected figures in the La Plata coffee community, producer Didier Javier Pajoy Ico brings exceptional curiosity and precision to every harvest at La Esperanza — a farm nestled in the vereda of Alto Cañada, Huila — with a relentless commitment to improvement season after season.
As founder of Mártir Coffee, the association spans nearly 50 producers across La Plata, Paicol, Nátaga, and La Argentina, with a guiding focus on elevating both quality and livelihoods throughout the network. Didier also oversees a purchasing point in downtown La Plata, managing lot intake, green grading, and sensory analysis, and serves as a judge at the annual Copa de Oro competition.
