This washed coffee was produced Huver Castillo, a third generation coffee grower. Huver and his father work alongside each other at El Paseo, one of three farms owned by Huver's family, operated by them for over 20 years. 


This coffee underwent several carefully controlled fermentation processes before being washed, pulped and dried, including a step involving adding back leachates to the fermentation tanks to enhance the floral character of the coffee. 

In the cup, this coffee tastes like sugarplum and lemongrass, with vanilla undertones.
