This 100% papayo microlot was produced by Jairo Arcila at the farm Villarazo, in the Quindio region of Colombia.
After being harvested following strict ripeness criteria and sorted for defects, the coffee cherries underwent 30 hours of underwater fermentation before being pulped. The parchment was then washed and dried.
Papayo is a rare, relatively uncommon varietal found only in Colombia, that formed from a rare mutation. It is characterised by its orange colour and elongated shape resembling a papaya.
In the cup, this coffee tastes like red grape and dates, with chocolate undertones.
